Chicken casserole with ritz crackers and cream cheese cracker#
Many thanks to the person who submitted it. 1 (1/4 lb) package Ritz cracker 1 2 cup butter or 1/2 cup margarine salt and pepper DIRECTIONS Mix sour cream and soup in a bowl, place inside the refrigerator. All in all, I thought it was a good tasting dish and my leftovers won't go to waste, but I want to continue to refine it a bit. Also, my rice was a bit too sticky and I will try to find a rice that stays looser. I think it's worth sticking with, but future tries will include more green peas, slightly cooked carrots, about 1/2 cup finely chopped onion and more bell pepper. On the downside, I had half of it left and I think it was mostly because it still lacks pizzazz on a potluck table also, it could have still had more flavor. My observations: The peas and bell pepper added to the attractiveness of the dish and I found it much tastier than previous versions. My changes: I used the 3 cups cooked rice that the original submitter said was really needed (later correction), added about 1/8 cup finely minced onion and 1/8 cup chopped red bell pepper, left out the onion powder, used one can celery and one can cream of chicken soup, and added about 2 ounces of green peas. The first was way too bland and I've been stepping up the flavors on subsequent efforts. This is the third recipe very similar to this that I've tried. I cut up the chicken into chunks because I was serving it to a group and that works better than whole breasts. I just made this recipe yesterday for today's potluck. It is worth it if you use the store bought broth. But don’t pass this recipe just because of the time to make the homemade broth. I plan on making it on the weekend with the homemade broth. And the left overs (about half the 9 X 13) turned out awesome. I put it back into a smaller casserole dish. I added ¾ a can of mushroom soup, another six oz of sour crm, and about ¼ cup of chicken broth, mixed it all together again and put new crackers on top. Then yesterday when I was ready to eat the left overs, I scraped of most of the crackers (so it wouldn’t get too mushy), put it in the microwave warmed it just enough to be able to stir it. I added two cups of shredded sharp cheddar cheese. I also used one can cream of chicken and one can cream of broccoli cheese (that is what I had). I cut up and fried the chicken in some olive oil before adding it. I just used store bought broth and skinless boneless chicken breast. I made this skipping the broth step only because I just don’t have that much time on a weeknight.
